1Heat oil in a medium saucepan on high. Add sweet potato, potato and parsnip. Cook, stirring for 2 minutes. Add ½ cup water. Bring to the boil and simmer, covered for 10 minutes.
2Add zucchini and broccoli. Stir well and simmer, cover for a further 10 minutes until vegetables are tender.
3Remove from heat and mash to desired consistency.
