Prep: 10 mins Cook: 20 mins Ingredients1 tbsp olive oil1 small onion (80g), chopped finely1 large carrot (180g), peeled, chopped1/2 tsp ground cumin300 g Sweet Potato, peeled, chopped1/2 cup (100g) red lentils, rinsed Directions1Heat oil in a medium saucepan over medium-high heat. Sauté onion for 3-4 minutes until tender. Add carrot, cook, stirring for 2 minutes. Add cumin and cook for 1 minute until fragrant. 2Add sweet potato, lentils and 2 cups (500ml) water. Bring to the boil and simmer, covered for 15-20 minutes until lentils and vegetables are tender. 3Remove from heat; cool slightly. Puree with a stick blender until smooth. close full screen 00:00
