2Slice the sweet potato lengthwise with the skin on. They should be approximately 1cm thickness
3Spray light with olive oil spray and put in the oven for 12-15 mins. They should be fork tender however not too soft
4Allow sweet potatoes to rest on a cooling rack to avoid them becoming soggy
5Slice the halloumi cheese into squares and pan fry on a medium heat in olive oil. They will only need 1-2 mins to cook on each side to be nice and golden
6To assemble, first add avocado on the potatoes and season with sea salt. Then add rocket leaves and the halloumi cheese. Season with chilli flakes, a squeeze of lemon and drizzle of honey and enjoy!
