Sweet Potato Toast Toppers

Ingredients

Sweet Potato Toast Topped with Mashed Avocado, Chicken and Aioli

6 slices (5mm thick) Sweet Potato, skin on

1 avocado, mashed

3/4 cup baby spinach leaves

1 cup shredded BBQ chicken

1/4 cup aioli

Sweet Potato Toast Topped with Tomato Medley and Balsamic Glaze

6 slices (5mm thick) Sweet Potato, skin on

200 g tomato medley, chopped

1/2 red onion, thinly sliced

Baby basil leaves and balsamic glaze, to serve

Directions

Sweet Potato Toast Topped with Mashed Avocado, Chicken and Aioli

1Preheat oven to 200C /180C fan-forced. Line an oven tray with baking paper Arrange slices on tray. Spray with oil and season to taste. Bake for 10-15 minutes until golden and tender.

2Spread toasts with avocado. Top with spinach and chicken, Drizzle with aioli. Serve immediately.

Sweet Potato Toast Topped with Tomato Medley and Balsamic Glaze

1Preheat oven to 200C /180C fan-forced. Line an oven tray with baking paper. Arrange slices on tray. Spray with oil and season to taste. Bake for 10-15 minutes until golden and tender.

2Top toasts with tomatoes and onion. Sprinkle with basil leaves and drizzle with balsamic glaze. Serve immediately.
