The ultimate supercharged snack.
250 g Sweet Potato, unpeeled, sliced into 5mm slices
2 tbsp tomato paste
60 g shaved ham, chopped
1/2 cup grated mozzarella cheese
Baby basil leaves, to serve
1Preheat oven to 220°C /200°C fan-forced. Line an oven tray with baking paper.
2Place sweet potato rounds on tray. Spray with oil. Bake for 10 minutes until almost just tender.
3Spread rounds with tomato paste. Top with ham and cheese. Grill for 3-4 minutes until golden. Serve topped with basil leaves.
